What better way to start my first Friday’s Food Recipe with a cocktail inspired healthy meal??
Shrimp are an incredibly lean protein & so easy to prepare I always keep a few 1 pound bags of peeled & deveined shrimp in my freezer. Typically I either throw them into pasta or saute them with some garlic & white wine.
But we were wine-less one night (a rare occasion!) so I thought it’d be fun to go cocktail style with them since I had this random leftover large bottle of margarita mix sitting in the fridge. They were SO good I may always take my shrimp to margaritaville! But even if you do not like the cocktail-twist, the process is so simple just change the tequila & margarita mix to your liquid of choice (wine, chicken stock, etc.) & you’ll still love how simple & easy & healthy this meal is to prepare. The shrimp take no longer than 5 minutes to cook & the pasta & greens practically cook themselves.- 4-8 cloves of garlic, diced - 2 T. olive oil
- 1 pound peeled & deveined medium shrimp (thawed if previously frozen) - 1/4 t. salt - 1/2 t. freshly ground pepper - 4 T. tequila (or 1/4 c. or 2 shots)
- 1 T. flour (white or whole wheat)
- 8 T. margarita mix (or 1/2 c. or 4 shots) - juice of 1/2 lemon or 1 lime - 1/2 c. chopped fresh parsley &/or cilantro (or 1 T. dried) - 1/2 T. unsalted butter
Put the garlic & oil into a medium-sized saute pan over medium-high heat.
Once the garlic is starting to brown (about 2 minutes) add the shrimp to the pan. They will immediately start to turn pink. Add the salt & pepper & stir. Continue tossing the shrimp & once they are all pink (another 2-3 minutes) & add the tequila. (Be careful if you are cooking over an open flame as alcohol to heat can catch on fire.) Stir to combine then add the flour & stir until it is dissolved. Add the margarita mix & citrus juice & let come to a boil (about 30 seconds). Stir in the butter & herbs & you are ready to eat!
I served this simply over some 100% whole wheat linguini & a side of roasted greens (kale & chard were on hand). The whole family LOVED it, there were plenty of leftovers & it was so easy to make this will definitely be a go-to meal in my house. Meets all my criteria for fun, delicious, easy & healthy eating!
